Everyone I make this for seems to love it so I thought I’d share my recipe here. I try to have avocados a few times a week as they’re so good for the skin but they can get a bit boring so this is a great way of spicing them up a bit.
I use –
3 very ripe avocados
1 small red onion, chopped.
1 tomato, chopped.
Handful of chopped coriander.
Juice of half a lime.
Pinch of salt and cayenne pepper.
Then literally just mash it all up with a fork! Absolutely delicious and kids like it too, I’ll either have it on some rice cakes or toast but of course would be great as a dip or on nachos.
